Description

  • Ingredients: Coarsely ground rice flour mixed with melted jaggery, a pinch of cardamom, and optional sesame or poppy seed

  • Traditional Process: Soak and lightly dry rice, grind into a slightly moist flour, prepare jaggery syrup to soft-ball consistency, combine with rice flour, let the dough rest for 12–48 hrs for optimal texture

  • Preparation: Roll dough into flat 3–4″ discs by hand on greased sheets, then deep-fry in low‑medium oil until golden and crisp—ideal when the outside is slightly crunchy and the inside remains soft
